Carol and I enjoyed this wine on “real date night”. “Real date night” is when you actually go out by yourselves, no with other couples, just you and the love of your life… And on “real date night” you have to go “one up” on any other regular date night (with other folks), because that is only right. So, all that being said, we decided to go to Ibiza and browse their superb wine list for, not only a good deal, but some wines we haven’t had.
The 2004 Bond Vecnia was right at the top of my four or five choices
On my last day in town before leaving for LA, Paul and I enjoyed this inaugural release from Meteor. This is a very impressive single vineyard 100% cabernet, and it’s no wonder. The first thing is the soil, which is made up of mineral-rich white volcanic ash, with clay, and a heavy deposit of ancient small cobble stones located on the top of a hill in Commbsville region of Napa Valley. The husband and wife team that makes this wine is one of great wine-making pedigree. Both Bill and Dawnine Dyer have workd extensively in the wine industry in various positions since the early 1970’s.
Paul and Carol setup an incredible lineup of cult wines for Friday evening that was a great privilege to be a part of. The first wine of the night was the 2002 “Falcor Le Bijou” ( “The Jewel” in French). This is an elegant Bordeaux-style blend that is drinking really well as of this tasting.
PS all of these wines were opened for about two hours before drinking, because someone was late
Paul, MC, and I enjoyed the 2005 Scarecrow at one of my favorite restuarants in Houston called Ibiza in midtown. They honestly have one of the best wine lists in all of Houston that is incredibly priced. This bold cult cabernet is made by winemaker Celia Masyczek.
The vines are exceptionally old by Napa standards at 60 years of age, with this years vintage only producing 400 cases. It took this wine about 1.5 hours in the decanter to release and shows it true nature.
Paul and I enjoyed this amazing cabernet by winemaker Helen Turley. Blankiet Estate was created in 1996 by Claude Blankiet and his wife, Katherine. From 46 acres on the foothills of the Mayacamas range, 16 acres of vineyard has been developed by renowned viticulturist David Abreu. Cabernet Sauvignon and Cabernet Franc were planted on volcanic ash and fractured rock, and Merlot on the clay deposited by streams draining the mountain ridge above.
Helen Turley was hired as winemaker and responsible for the first eight vintages.
Since hurricane Ike blew into town, Paul and I have not done much blogging. All things in perspective, this blog had to take a back seat to the devastation we’ve all experienced recently in Texas. Last night we decided it was time to drink some fine wine, and ponder it’s simple beauty, and of course blog about it.
We started off with the 2005 Fairchild Cabernet by winemaker Paul Hobbs.
Wine Details:
Varietal: 100% Cabernet

On a wonderful summer day, low humidity, lower 90’s, my son’s first football game of the season (tied last year’s super bowl champions 7 to 7), AND a first tasting of the 2006 Leviathan. We sat outside and had out first taste and wow…
The nose comes at you like a sniper. Our first impressions revealed tons of dark fruit with a hint
This review is a continuation of Wednesday at Cellar-17 where we decided to enjoy Shiraz for the evening and finish off with the night with a 2005 Fourteen Appelations. As I blogged the other day we started off the evening with a couple of Shiraz from Vinaceous winery 2006 first year offering that were nice and priced fairly. We ended our Shiraz vibe for the night with the 2004 RWT from Penfolds.
Had this Spanish Rioja style wine about two months ago with Paul from winemaker Christian Tietje, and really enjoyed it. This is a big fruit bomb.

While on my latest trip to Illinois, I took Kenny up to Chicago to see the town. We ate at Gibsons which was beyond awesome… The way a restaurant should be!
The wine list was extensive and I searched out the best deal on the menu. It was a 2006 Turley for $70.
I rejoiced and ordered it quickly. When the wine came out I was amazed at the color which was almost rust like an old wine would show. However this wine was young. The initial taste was very balanced and showed promise… I rejoiced again!
Wow! This wine is amazing! Berry fruit with blue hues… Very structured and very well balanced. Not too spicy perfect for a nice steak which I am about to have. Almost a dust element although I would probably say the terrior is coming through nicely.
Find it. Get it. Drink it.
93+ PaulC
