2005 Spottswoode Estate Cabernet
Well, this tasting is a little old, but was very nice and unique, in that we all took notes on the wine (actually Carol wrote the notes, as we all tasted).
Obviously, this wine is a top a performer and as such, we have had it several more times since this tasting. It is always special and most of the components are the same varying only by the mood of the drinker. Interesting how everyone had something a little different to add to the puzzle, but some of the many puzzle pieces look and sound the same.

Jimmy
Color – dark ink
On the Nose – Currant, plum, forest floor, little tobacco, hint of jalapeno pepper, and a hint of vanilla
Taste – Mouth feel was full, round, velvety tannins, transition from front , mid, to back pallet very smooth.
Finish – Long, lavender and bright cherries

On the nose – boysenberry, plum, raw chewing tobacco, leather, red bell pepper
Taste – full on the pallet, heavy, thick, while being balanced, the tannic component hits me on the back cheek, a little dry but sneakily velvety smooth, otherwise the mid pallet feels like silk, floral component, and finish goes on and on
Dianna
On the nose – plum, dark cherry, matchstick, white pepper, little leather, red bell pepper
Taste – cardamom, molded together hard to identify individually, perfume, floral and long finish withe a little onion

While being the scribe for everyone tonight, this is what I taste and smell. On the nose I immediately got floral and perfume and some kind of pepper. On the taste pepper or onion also. The finish is very long and really nice…
- This wine should be decanted a while, this is an evolving bottle of wine.
